How many Virtual Servers can I run on one physical box?

This depends on both the level of your hardware and the type of server licenses you purchase.

Can I virtualize my Email server

You can virtualize any of your servers, provided the performance requirements are accounted for in the design.

Is there a limit to the number of servers I can virtualize within Active Directory?

In our experience the short answer is no, we've worked in environments where as many as 130 servers have been virtualized in a single Active Directory Domain.
